Yuca Fries with Garlic Mojo

Whole30 Baked Yuca Fries served with Garlic Mojo!
If you are not familiar with Yuca (also known as Cassava), it is a delicious and starchy root vegetable native to South, Central America and the Caribbean and it is quite often used in Latin dishes. It has become a very popular ingredient among people who follow the Paleo diet or Whole30 program!
YUCA FRIES
Ingredients:
1 lb fresh yuca, peeled (cut into 3-4 inch rounds)
1/4 cup avocado oil
Salt and pepper to taste
A pinch of paprika (optional)
Directions:
Preheat the oven to 425F.
Cook the yuca for 8-10 minutes in a boiling pot of lightly salted water until fork tender. Drain and let cool.
Cut yuca pieces in half and remove the inner root. Then cut into fingers.
Lay the fries in a single layer on a baking tray, drizzle them with avocado oil and season with salt and pepper.
Bake in the oven for 15-20 minutes, flipping halfway through.
Sprinkle with paprika and serve with garlic mojo.
GARLIC MOJO
Ingredients:
1/3 cup @primalkitchen garlic aioli mayonnaise
1/2 lime, juiced
2 tbsp chopped cilantro
Salt and pepper to taste
Directions:
Add all of the ingredients except the mayonnaise to a small food processor and blend until finely chopped. Add the mayonnaise and pulse a couple of times to combine.
