This Camarones Guisados or Stewed Shrimp recipe is popular in many latin countries and it is loaded with garlic, onions and plenty of fresh cilantro. You can serve it over brown or cauliflower rice and a side of tostones. You are going to love it!
1 lb shrimp, peeled, deveined with tails
1 tbsp avocado oil
1/4 medium red onion, diced
1/2 medium red bell pepper, diced
1 tsp chopped garlic
1 tsp Loisa Sazón
1/3 cup tomato sauce
1/2 cup vegetable broth
1 tsp fresh cilantro, chopped
Salt and pepper to taste
In a large skillet, heat avocado oil over medium heat. Add shrimp, season with salt and pepper and cook for a minute on each side. Transfer cooked shrimp to a plate and set aside.
In the same skillet add onions, bell pepper, garlic, sazon and cook for 2 min over medium heat. Add tomato sauce and vegetable broth. Mix well and cook for about 8-10 minutes. When the sauce thickens, add shrimp and cook for another minute. Do not overcook.
Taste and add salt and pepper, as needed.
Serve with lemon wages and sprinkle with fresh chopped cilantro.
