Smokey Latin Shrimp and Cauliflower Rice

Easy and full of flavor Smokey Latin Shrimp & Cauliflower Rice!
2 tbs avocado oil
2 shallots, finely diced
1 green pepper, diced
1 lb shrimp, peeled and deveined
12oz frozen cauliflower rice, thawed
Salt to taste
Heat the oil in a large skillet. Add shallots and cook for 2min or until fragrant. Add the green peppers and cook for 5min. Add shrimp and cook for 5min, stirring frequently.
Add the sauce and stir to mix with the other ingredients. When the sauce mixture starts boiling add cauliflower rice. Mix and cover. Let simmer for 10-15min, stirring occasionally. Taste and add salt as needed.
