Sausage Veggie Roast

This Sausage Veggie Roast is a family-friendly weeknight meal that is simple and so helpful to have on hand. You are going to love the taste of this one-pan sausage dinner! The flavor is so good.
HOW TO MAKE THIS ONE-PAN SAUSAGE DINNER
This one-pan dinner recipe comes together in about 45 minutes and requires very little hands on prep work. To make this sausage dinner, simply:
Peel the butternut squash.
Cut up butternut squash (remove seeds).
Cut onion in wedges.
Cut tomatoes in half.
Toss the squash and onions with a little olive oil and spices.
Roast sausages, squash and onions for 20 minutes.
Then, add the tomatoes to the baking tray and roast for another 10-15 minutes or so, until the squash have softened.
Take the sheet pan out of the oven and serve immediately!
2 spicy (or mild) Italian pork sausages
1 medium butternut squash (peeled, seeds removed and cut in small squares)
1 red onion (cut in wedges)
1 handful cherry tomatoes (cut in half)
2 tsp olive oil
1 tsp onion powder
1 tsp cumin powder
1 tsp garlic powder
1 tsp paprika (optional)
Salt and pepper to taste
Preheat the oven to 400F.
Toss squash and onions with olive oil, onion powder, cumin powder, garlic powder, paprika, salt and pepper.
Place chunks of butternut squash, wedges of onions and sausages in a roasting pan and roast in the oven for 20 minutes.
Remove from the oven, turn the vegetables and sausages so they brown evenly, then add the cherry tomatoes.
Return to the oven for another 10-15 minutes, until the squash has softened.
Serve right away!
