Hogao (Colombian Creole Sauce)

Hogao (Colombian Creole Sauce) is one of the most traditional seasoning sauces in Colombia and we use it as a base for many typical dishes and also as a dipping sauce for tostones, arepas and yuca fries.
3 tablespoons avocado oil
1 medium red onion, finely chopped
2 ripe tomatoes, finely chopped
4-5 cloves garlic, minced
4 scallions, finely chopped
1/3 cup green pepper, finely chopped
1 teaspoon ground cumin
2 teaspoons @eatloisa sazon
1/4 cup cilantro leaves, finely chopped
Salt & pepper to taste
Heat the oil in a skillet, add the red onions, tomatoes, scallions, garlic, green pepper, ground cumin, sazon and cook gently for about 15 minutes, stirring until softened.
Reduce the heat to low, add the cilantro, salt and pepper, and cook for 5 more minutes, stirring occasionally until the sauce has thickened. Taste and adjust seasonings as needed.
