Herb Roasted Pork Tenderloin

I made this Herb Roasted Pork Tenderloin for our Friendsgiving celebration last weekend. It is delicious and simple to prepare! Just mix up some garlic, herbs, and ghee, smear it on the pork, and throw it in the oven. That’s it!
Ingredients:
2 tsp minced garlic
1/2 tsp oregano
1/2 tsp dried thyme
1/2 tsp fresh chopped rosemary
1/2 tsp paprika
1.5 tbsp ghee, melted
Salt & pepper to taste
1 to 1.25 lbs. pork tenderloin
Directions:
Preheat the oven to 300F. Add the melted ghee, oregano, thyme, rosemary, garlic, paprika, salt and pepper to a small dish. Stir to combine.
Place the pork tenderloin on a baking sheet. Rub the ghee and herb mix over the entire surface of the pork, including the underside.
Cover the pork with aluminum foil and bake for 30 min.
Uncover, bake at 400F for 10-15 more minutes or until the internal temperature reads at least 145ºF. Allow the pork to rest at room temperature for 10 minutes before slicing and serving.
