Ensalada Rusa, which translates to Russian Salad, is a classic potato salad served throughout Latin America, made with potatoes, carrots, peas, apples, onion, and mayonnaise.
3 ½ lbs russet potatoes (about 4 large potatoes, peeled, steamed and diced)
1 lb carrots (about 4-5 medium size carrots, peeled, steamed and diced)
1/2 cup peas (steamed for less than 3 minutes)
1-2 apples peeled and diced
1/3 cup diced white onion
1 lime, juiced
1 tsp garlic powder
1 cup @primalkitchenfoods Avocado Oil mayonnaise
Salt & pepper to taste
1 tbs finely chopped cilantro or dill
4 boiled eggs, cut in half or quarters
In a large bowl , combine potatoes, carrots, peas, apples, onions, lime juice, garlic powder, mayo, salt and pepper. Mix well. Sprinkle with fresh dill or cilantro and top with eggs. Store in the fridge until ready to serve.
