Colombian Scrambled Eggs

Eating Huevos Pericos (Colombian Scrambled Eggs) with Yuca Arepa and dreaming of the day I can visit my hometown again ❤️

1 medium tomato, finely chopped
2 tbs scallions, finely chopped
1 tbs ghee
1/8 tsp onion powder
Salt and pepper to taste
Heat ghee over medium heat in a skillet. Add tomatoes and scallions and cook about 5 minutes, stirring occasionally.
Meanwhile, in a small bowl beat the eggs, onion powder, salt and pepper. Pour the eggs in the skillet with the tomato mixture and cook over medium heat, without stirring, until mixture begins to set.
Stir twice or until the eggs mix with the tomato and scallions and cook about 2 minutes or until the eggs are the consistency you like. Sprinkle with chopped scallions!
