Chili con Carne

A bowl of comforting and delicious Chili con Carne! 😍
If I told you that I don’t enjoy a bowl of hot bean soup, I would be lying! And, what kind of latina would that make me? 😂 But, I do have to eat them in moderation, because my body doesn’t digest beans easily, and this recipe makes that so hard. Try it and you will know what I mean!
1 tbsp avocado oil
1/4 cup chopped red onion
1 lb lean ground beef (turkey would be great too)
1 15oz can of red kidney beans
1 15oz can of pinto beans
1 10oz can of @roteltomatoes diced tomatoes & green chilies (mild or regular)
1 8oz can of tomato sauce
1 tbsp chili powder
1 tsp paprika
1 tsp oregano
1 tbsp Worcestershire sauce
2-3 tsps fresh minced garlic
2 tsps ground cumin
1-2 tsps hot sauce. I like @sietefoods
Salt & pepper to taste
Heat up oil in a pot over medium heat. Sauté onions for 2 minutes.
Add meat and cook until brown.
Add chili powder, paprika, Worcestershire sauce, cumin powder, garlic, oregano, salt & pepper.
Add diced tomatoes & green chilies and tomato sauce. Mix to combine and simmer for 10-15 minutes. Stir in the beans and hot sauce and simmer for about 1hr.
Taste and adjust spices as needed.
This chili tastes even better the next day!
Chopped green onions, avocado and jalapeño pepper slices.
