This Whole30 Carnitas (Mexican Slow Cooker Pulled Pork) is one of my family's favorite dishes. It is pork seasoned and slow cooked until tender. Then it's shredded gently with a fork and pan fried until golden and crispy. I love my Carnitas in tacos or served as part of a bowl or salad! It is the perfect freezer food and it requires 5 minutes of preparation. Need I say more?


4lb pork butt

1 medium red onion, cut in wedges

3 oranges, juiced

2 limes, juiced

5 cloves garlic, minced

3 tsp ground cumin

2 tsp adobo

1 tbsp avocado oil

Salt & pepper to taste


Place the pork in a slow cooker, with the layer of fat up.

In a small bowl combine cumin, adobo, salt and pepper and rub all over the pork.

Top with the onion, garlic, orange and lime juice.

Slow cook on low for 10 hours (or on high for 6 hours) or until tender enough to shred.

Remove pork from the slow cooker and let cool. Set aside about a cup of the pork liquid. Shred pork using two forks or your fingers.

To crisp: Heat oil in a large skillet over medium heat. Spread pork in the pan and add about 2 teaspoons of the liquid. Cook until the pork is brown and crusty on one side and remove from the skillet. Crisp pork in batches so the skillet is not crowded.
