Caramelized Plantains is a typical dish in Colombia and other Caribbean regions. This delicious and traditional dish is very easy to make and even though it is sweet, it is usually served as a side dish! Top these sweet plantains with a scoop of dairy-free ice cream and call it dessert!
2 ripe plantains (end cut and peeled)
1/3 cup brown coconut sugar @bigtreefarmsbali
2 cinnamon sticks
1 tbsp ghee @vitalfarms
1 tsp vanilla
1 scoop @so_delicious cashew milk ice cream (I used Salted Caramel Cluster)
Cut the plantains in quarters.
In a pot, place the cut plantains and add water until it covers the plantains.
Add sugar and cinnamon sticks and cook over low to medium heat until the sauce thickens, about 25-30min.
Add ghee and vanilla and cook for a couple of minutes.
Serve hot and top with a scoop of ice cream.
