Banana Egg Blueberry Pancakes
Any day I make these Banana Egg Blueberry Pancakes for my kids is a happy day! I have been making these pancakes for them since they were little, and they never seem to get tired of them. They are delicious, easy to make and nutritious - so I try to make them at least once a week.
I love it when my kids help in the kitchen even though it can be crazy and messy sometimes! When I make these, my son helps with smashing bananas, cracking eggs and mixing. My daughter helps with pouring the mix into the pan and flipping. It is so much fun!
All you need to make these are bananas and eggs. Blueberries are really optional, but so great to add. I also love making these with nuts, chocolate chips or oatmeal.
1 large ripe banana
A pinch baking powder
A handful blueberries (if using)
Mash up banana in a large bowl. Whisk eggs and add to banana paste.
Fry gently in a pan on low-medium heat with a little heated avocado oil.
If using blueberries, add to one side of the pancake before flipping.
